Vinería San Telmo (VST) fue la idea de Juan Manuel Tarquini Alexeew y su mujer, que quisieron ofrecer lo que ellos mismo buscaban cuando salían a comer.    Lo que hoy en día es VST era solo el  probador vacío y viejo de una antigua tienda de uniformes cuando lo encontraron.  Tarquini no tuvo ninguna duda. En cuanto vio el sitio en el 2004, supo que ahí debería abrir VST. Después de unos meses de trabajo duro, lo que era un local abandonado se convirtió en lo que hoy día es VST.

La carta de comidas está ideada por el Jefe de Cocina, el socio de VST (José Vicente Flores Gallardo), la mujer de Tarquini, Reyes Moreno (que a su vez es la repostera de VST), y Tarquini. Después de realizar diferentes pruebas, este equipo se reúne y decide qué debe ir en la carta nueva.  Aproximadamente, una vez por año, nuevas tapas son incorporadas a la sección “Lo Nuevo de la Carta”. Según Tarquini “lo complicado es sacar tapas de la carta para dar paso a las nuevas tapas, pero de alguna manera lo conseguimos.  Aunque a veces, por petición de nuestro clientes, tenemos que reincorporar a la carta tapas o comidas  que han sido quitadas en otra temporada.

According to Tarquini «the tricky thing is to take cover from the menu to make way for the new tapas, but somehow we get it. Although sometimes, at the request of our clients, we have to reincorporate to the menu tapas or meals that have been removed in another season.
